INGREDIENTS

  • 1 lb ground beef (grass fed)
  • 1 medium chopped onion
  • 1/2 large green pepper chopped
  • 2 small jalapeno pepper chopped (seeds removed prior)
  • 1 28 ounce can Muir Glen Organic Fire Roasted Diced Tomatoes
  • 2 16 ounce cans kidney beans (drained)
  • 1 packet McCormick Chili Tex-Mex seasoning mix
  • salt to taste
  • Red Pepper flakes to taste (a couple of shakes)
  • Pampered Chef Chipotle Rub Adobo De Chipotle (a couple of shakes)
  • Sargento shredded sharp Cheddar cheese

DIRECTIONS

 

  1. Cook the beef, onion, green pepper, jalapeno pepper until meat is brown
  2. Stir in tomatoes, kidney beans (drained), chili seasoning mix, red pepper flakes, and chipotle rub
  3. Bring to boil, reduce heat
  4. Cover and simmer for 20 minutes
  5. Upon serving, top with a generous amount of Sargento shredded sharp Cheddar cheese and allow to cool for a few minutes before serving
